Easy Cannoli Cocktail

We are no strangers to throwing family  parties, usually last minute, but we always pull them off without a hitch.  One of my favorite party must haves is a signature drink.  Whether it’s summertime sangria or a fun martini, having a  drink planned saves time, helps me organize, and keeps the budget under control. Most importantly, it sets the tone and the guests feel extra special having a drink prepared just for them!

Our latest soiree was for a birthday party that we put together in just a few short days.  The food was kept simple with pizza & wings and of course, a birthday cake.  I wanted to find a drink that would be fun and fit the party so the obvious choice was a birthday cake martini.  That is, until I realized I had very little  nothing in the house to make one. Plan B brought me to a cannoli cocktail and it was to die for!

Since I already had to go to the grocery store, adding half & half and ricotta cheese to the list was no biggie and luckily for me there was a liquor store right across the street so it’s practically like I was meant to make this drink. Just a few quick and easy steps and you’ll be impressing your guests and knowing you kept your wallet happy.


 

Cannoli Cocktail

Ingredients:

  • 1 C Ricotta Cheese
  • 1/2 C Half & Half
  • 1/4 C sugar
  • 1 oz Baileys Irish Cream
  • 1 0z Pinnacle Whipped Vodka
  • 1/4 C melted chocolate chips
  • graham crackers, crushed

Mix together the ricotta, half & half, and sugar to create the “cannoli” mixture.  More or less sugar can be added, depending on how sweet you like your drink. Set aside and keep chilled.

Melt the chocolate chips in a microwave safe bowl  for 30 seconds at a time, making sure they don’t seize up. A good way to prevent this is adding a little half & half to keep the mixture creamy.

Drizzle the melted chocolate on the inside of the glass then turn the cup over and rim the glass  in chocolate. Take the chocolate lined glass right to your crushed graham crackers to finish it off.

Add a few ice cubes to your glass and pour in the Whipped vodka and Baileys.  Finally, take your cannoli mixture and add it to the glass, giving everything a good stir to make sure it’s mixed well.

And now the fun part, add a straw and enjoy your delicious drink!
